Jacco was born in Ede, Netherlands. His family immigrated to Canada when he was 5, and they have been living in the Lethbridge area ever since. He was involved in the family farm from a young age, but never had a real passion for farming. In 2005, when we assumed ownership of Crystal Springs Cheese, Jacco was 16. He became more and more involved in the cheese making part of our operation, and as each year went past his love for cheesemaking increased. He started to look for ways to increase his knowledge, and in 2010 he attended the cheesemaking course, together with Sharilyn, at the University of Guelph. Whenever the opportunity arrives, he likes to shadow other cheesemakers, and learn new little bits of knowledge that help him to make cheese for his customers to enjoy!
Jacco’s job at Crystal Springs is running day to day operations. He makes cheese every day, and oversees and takes part in all the daily production work. Together with the production team, he ensures that every batch is made to the highest standards, and tasting just right. Occasionally Jacco will go on a sales trip or travel to investigate new equipment, but making cheese and satisfying customers is what he enjoys most!
Outside of work, Jacco enjoys spending time with the love of his life, Sharilyn, together with their 3 kids. The family enjoys traveling to the Netherlands, camping with friends and family, and just hanging out at their country home. Jacco and Sharilyn also like to help out at the Streets Alive Mission in Lethbridge, giving back to the community by serving the less fortunate.
