½ red onion sliced thinly into half circles
1 tbsp white vinegar
4 large tomatoes (large dice)
1 large cucumber (large dice)
1 green pepper (medium dice)
½ cup diced feta cheese
4-5 basil leaves chiffonade
Greek salad dressing
¼ cup olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
¾ tsp garlic powder
¾ tsp dried oregano
¾ tsp dried basil
½ tsp salt
½ tsp onion powder
Directions:
In a medium bowl combine vegetables, feta and basil. In a separate bowl combine all the ingredients for the dressing and mix together. Once the dressing is made drizzle it onto the salad and mix until everything is coated in dressing. You may use all the dressing, but it is not necessary.
