Greek pita pizzas
4 8-inch pita breads
2 tbsp lemon juice
¼ tsp oregano
¼ tsp basil
½ tsp garlic Powder
6 Tbsp olive oil
2 cups baby spinach leaves chopped
¼ cup grape or cherry tomatoes (cut in half)
3 tbsp chopped olives
½ crumbled feta
½ cup mozzarella
Preheat oven to 375F. Line a baking sheet with parchment paper.
In a bowl mix together the lemon juice, oregano, basil, garlic powder and olive oil.
Place pitas on the baking sheet and brush with the oil/lemon mixture.
Mix together the spinach, tomatoes and olives, at oil/lemon mixture until evenly blended.
Put the spinach mixtures onto the rounds and top rounds equally with cheese. Bake for approximately 10 minutes (or until bubbling)
