Poutine Gravy

¼ cup flour
4 tbsp unsalted butter
1 shallot (Minced)
1 Clove garlic (Minced)
4 cups beef stock (warmed)
2 tbsp ketchup
1 tablespoon balsamic vinegar
2 teaspoons Worcestershire sauce
Salt and pepper to taste

Melt butter in a small saucepan, add garlic and shallots and cook until sweating (do not brown). Add the flour and stir on medium heat until flour/butter mixture browns. Slowly add the warmed beef stock and stir continually to allow clumps to dissolve. Once the beef stock/roux is smooth, add the ketchup, balsamic vinegar and Worcestershire sauce. Add salt and pepper as needed.
