Orzo Salad With Roasted Red Peppers, Spinach And Feta

Lemon Honey Vinaigrette:
1/3 cup olive oil
¼ cup red wine vinegar
2 tbsp lemon juice
2 tsp honey
Pinch of salt and pepper

Orzo salad:
2 Cups orzo pasta
6 cups chicken broth
1 1/2 cup roasted red peppers chopped
1 cup chopped spinach
3 Tbsp fresh basil (chopped)
3 tbsp Green onions (Sliced)
Salt and pepper to taste
1 1/4 Cup crumbled feta
1 cup diced cucumber
¼ cup halved cherry tomatoes
½ Cup pine nuts toasted (Optional)

Bring broth to a boil in a medium saucepan. Add orzo and cook according to package directions.
Drain pasta and transfer into a large bowl and toss in a drizzle of the lemon honey dressing and allow to cool.
Toss the cooled pasta with the red peppers, spinach. Basil and green onions pour the vinaigrette over the salad and stir. Sprinkle the feta and pine nuts (Optional) over the salad, toss, and serve.
