Chicken Marinade:
2 lbs chicken cut into cubes
¼ cup Greek yogurt
3 tbsp lemon juice
2 tbsp olive oil
1 tbsp red wine vinegar
1 ½ tsp salt
1 tsp pepper
2 tsp oregano
Tzatziki:
See recipe above
Greek salad:
3 tomatoes diced
2 cucumbers peeled and diced
¼ red onion diced
2 tbsp fresh parsley diced
1 tbsp olive oil
Salt and pepper to taste
Feta cheese
4-6 Greek pita breads
Directions:
Place chicken, yogurt, lemon juice, olive oil, vinegar, salt, pepper and oregano in a bag and let marinate 4 hours (ideal time is 24 hours)
Tzatziki (see above)
Greek salad: add tomatoes, cucumber, red onion, parsley, olive oil, salt and pepper in a bowl and stir until it is all coated in olive oil. Season to taste.
Cook the chicken on a skillet on medium heat for 8-10 minutes, or until it is completely cooked.
Place the chicken in a pita bread and top it with Greek salad and tzatziki sauce. Garnish with additional feta if desired.
